With this bounty of vegetables, Gazpacho is the perfect dish to make and enjoy. This recipe has been a favorite of mine for over 20 years. MIX: ♦ 1 can tomato soup (10 ¾ oz. undiluted) ♦ 1 ½ cups tomato juice ♦ 1 cup water CHOP: ♦ ¾ cup cucumbers ♦ ¾ cup tomatoes ♦ ½ cup green peppers ♦ ¾ cup Vidalia onions ADD: ♦ 2 Tablespoons red wine vinegar ♦ 1 Tablespoon Italian dressing (I use Good Seasons dry package dressing made according to directions) ♦ 1 Tablespoon fresh lemon juice ♦ 1 Tablespoon Worcestershire sauce ♦ ¼ teaspoon black pepper DIRECTIONS: Salt to taste, and add a dash of Tabasco, if desired. I always taste and adjust seasonings. In small batches, lightly puree all of the ingredients in a blender. Refrigerate until thoroughly chilled. The recipe serves six, but it is a great one to double. Helen Hines
